Per Wikipedia: Sweet and sour is a generic term that encompasses many styles of sauce, cuisine, and cooking methods. It is commonly used in East Asia and Southeast Asia and has been used in England since the Middle Ages. Sweet and sour sauce remains popular in Asian and Western cuisines.

What is the sweet and sour sauce made of?

The sweet and sour sauce is essentially made up of a “sweet” ingredient and a “sour” ingredient to make it taste sweet and sour. This is a family recipe, and we use sugar as sweet ingredient and vinegar as sour ingredient. In the Philippines, Lapu-Lapu fish also known as Grouper is the type of fish commonly used to make this dish. I use Tilapia for this recipe as it is reasonably priced.
Also, to save me some time in cooking, I bought the tilapia in Seafood City (known as Asian/Filipino supermarket) and have them fried the fish for me already. This recipe is so easy to make and you can use your desired fish, and if you prefer a filet fish, that’s fine too.

Another option for the sauce, we can use pineapple chunks in the can and the juice from it. It tastes great as the sweet ingredient.

THE INGREDIENTS:

2 to 4 fried Tilapia (or any fish of your choice)
8 oz can Tomato Sauce
4 to 5 garlic minced
1 medium onion sliced
1 medium ginger sliced
Olive oil
Pepper and Salt to taste
2 tbsp. Fish sauce
1/3 oz. Vinegar
1 glass of water
Slurry mix ( mixture of flour starch and 4 tbsp of water)
Cilantro (for garnish)
Medium green and red bell peppers sliced
4 tbsp sugar
